This is an Umami-rich dashi soy sauce (soy sauce enriched with soup stock) that is made with Shimousa Soy Sauce, hongare-katsuobushi (fermented dried skipjack tuna), kelp from Hokkaido, raw sugar from Tanegashima Island, and sea salt from Okinawa.
By using Shimousa Soy Sauce lavishly and combining with hongare-katsuobushi (fermented dried skipjack tuna), dried mackerel, and dried frigate mackerel, it gives a rich taste of dashi (soup stock) and soy sauce.
